Oops! No more shortening for the empanadas. I'm using egg roll wrappers instead. Hope it works! I also added a salad with corn, roasted red pepper, zucchini, onion, lime juice, salt, and oil. Yum.
Egg roll wrappers as a substitute for empanada dough? BAD IDEA! Don't try that at home... we emptied them all and had plantain beans with bits of egg roll in them. It was, well, not as good as usual! :)
